Victoria sponge recipe

This is the recipe to follow for the Victoria sponge cake in the great Clayhidon Bake Off on August 29. You can start practising straight away!

You need two 8in round cake tins.
Ingredients are 8oz fat (margarine)
                        8oz self raising flour
                        8oz caster sugar
                        4 eggs
                        filling of choice
                        icing sugar to dust.
And don't forget the competition for the best thing to be made in a muffin tin. They are hoping for real creativity here.
